What it is

Resistant dextrin starts as ordinary starch and ends as a branched molecule that amylase cannot digest. It brings no taste, no colour, no haze and almost no viscosity, which makes it the fibre you add when the product must not change.

Chain lengthAverage DP 10 to 20Branched, with alpha and beta linkages that resist amylase
SolubilityVery highUp to 70% solutions, water clear
SweetnessUnder 10%of sucrose, effectively neutral
Fibre content90% minimumon dry basis
How it is made

Three steps from source to powder

1
Start

Corn or tapioca starch

2
Dextrinise

Heat and a trace of acid rearrange the starch into branched chains with linkages digestion cannot break

3
Finish

Enzyme treatment removes the digestible fraction, then purification and spray-drying

In food

How it behaves in the pot

Six things a formulator asks before anything else. Five bars is a lot of that property, one bar is a little, and neither is good or bad on its own. It depends on the food.

Handle with care

Adds nothing sensory, which is the point. Its prebiotic effect needs a higher dose than the oligosaccharides, so pair it with XOS or GOS when the claim matters.
