What it is

Polydextrose is a randomly bonded glucose polymer, built so that human enzymes cannot take it apart. It dissolves like sugar, bulks like sugar and carries flavour like sugar, with a quarter of the calories and none of the sweetness.

Chain lengthAverage DP about 12Highly branched, random glucosidic linkages
SolubilityVery highOver 80 g dissolves in 100 ml of water
SweetnessNoneSlightly tart at very high use
Fibre content90% minimumon dry basis
How it is made

Three steps from source to powder

1
Combine

Glucose with a little sorbitol and a citric acid catalyst

2
Polymerise

Heated under vacuum so the glucose links in random, highly branched chains that digestion cannot follow

3
Refine

Neutralised, purified and dried to a powder or supplied as a syrup

In food

How it behaves in the pot

Six things a formulator asks before anything else. Five bars is a lot of that property, one bar is a little, and neither is good or bad on its own. It depends on the food.

Heat
Stable to around 150 °C, baking and frying
Acid
Holds from pH 3 to 7
Browning
Grade dependent; test the batch
Body and viscosity
Low viscosity, adds body and gloss
Hygroscopicity
Sticky above 60% humidity; pack accordingly

Handle with care

Hygroscopic above 60% humidity and slightly tart at very high use. Its microbiome effect is a general shift rather than a bifidogenic spike, so blend with XOS or GOS where a prebiotic claim is needed.
