What it is

Inulin is a chain of fructose units, two to sixty long, stored by chicory and Jerusalem artichoke in their roots. Short chains dissolve easily and taste faintly sweet; long chains gel and feel like fat. The same molecule, two very different jobs.

Chain lengthDP 2 to 60Native grades average DP 9 or more; long-chain grades above 23
SolubilityHigh to moderateShort chains dissolve freely; long chains need warm water
SweetnessAbout 10%of sucrose for native inulin; close to zero for long chain
Fibre content90% and aboveon dry basis, typical food grades
How it is made

Three steps from source to powder

1
Harvest

Chicory root or Jerusalem artichoke tuber, lifted in the cool season when inulin content peaks

2
Extract

Hot-water extraction, then filtration and purification to remove colour, minerals and free sugars

3
Dry

Spray-dried to a free-flowing white powder; long-chain grades are fractionated for creaminess

In food

How it behaves in the pot

Six things a formulator asks before anything else. Five bars is a lot of that property, one bar is a little, and neither is good or bad on its own. It depends on the food.

Heat
Stable in neutral systems and baking
Acid
Hydrolyses in hot, low-pH drinks
Browning
Low; fructose ends can brown if hydrolysed
Body and viscosity
Syrupy at short chain, creamy gel at long chain
Hygroscopicity
Moderate; short chains draw more moisture
Sugar-replacement bulk
Good, especially short-chain grades

Typical values for food grades. Every FIBREDEX® lot ships with its own COA and specification.

Handle with care

Prefers neutral systems. In hot, acidic drinks the chain hydrolyses, so pick resistant dextrin or XOS there. Keep daily intake near 10 g for comfort.
