At a glance

What it is

Galacto-oligosaccharides are short chains of galactose on a glucose end, made from milk lactose by the same kind of enzyme the gut uses. They are the closest commercial relative of the oligosaccharides in human milk, which is why every major infant formula uses them.

Chain lengthGlucose + 1 to 7 galactoseBeta linkages that digestion skips
SolubilityVery highSyrup or powder
Sweetness30 to 35%of sucrose, grade dependent
Fibre content57% to 90%+by grade; high-purity grades above 90%
How it is made

Three steps from source to powder

1
Source

Lactose from milk

2
Transgalactosylate

Beta-galactosidase moves galactose units onto lactose, building chains of two to eight

3
Purify

Residual sugars reduced, then supplied as a syrup or spray-dried powder

In food

How it behaves in the pot

Six things a formulator asks before anything else. Five bars is a lot of that property, one bar is a little, and neither is good or bad on its own. It depends on the food.

Heat
Good; some loss in long hot holds of milk
Acid
Holds where inulin would hydrolyse
Browning
Reducing sugars brown in bakery and UHT
Body and viscosity
Low to moderate syrup body
Hygroscopicity
High, especially syrups
Sugar-replacement bulk
Good in dairy systems

Typical values for food grades. Every FIBREDEX® lot ships with its own COA and specification.

Handle with care

Carries some residual lactose and browns with heat, so plan the process around it. Not for vegan positioning. Keep adult doses near 8 g a day or below.
